我睇緊f.6 bio,, 講到fatty acids 書話saturated has higher m.p. than unsaturated 想問點解？ 詳盡少少 thz 更新: thz 不過我本書個single bond畫做straight chain 反面個double bond個位bend左 咪同你講張岩岩相反？

Unsaturated fatty acid 中的 hydrocarbon chain較多CC multiple bonds （主要是較多 C=C double bond）。 C-C single bond 和 C=C double bond 最主要的分別是 C-C single bond 可以 freely rotates，但 C=C double bond 不可 rotate。 因此，C-C single bond 可以 rotate 到某一位置，令 fatty acid molecules 在固體中 packing 較 close together，而 C=C double bond 則不可以。 所以，saturated fatty acids 的 melting point 較 unsaturated fatty acid高，因為 saturated fatty acid 的 packing 較 close。
